Cheese Macaroni with Baked Fish


I was craving for Cheese Macaroni and since my maid went for her off day, I decided to cook this for my kid's lunch. I just marinated the fish with my favourite English seasonings (Basil, Oregano and Tomatoes) and baked it. For the macaroni, I bought the instant Macaroni Cheese packs and cooked in no time. It was indeed a delicious meal!

Salmon Cheese Pastry


Another try out with Puff pastry, stuffed with Salmon and cheese in it and plaited to make a pretty design. To make it more filling for lunch, I experimented using pancake batter and made into muffins. My kids still prefer the plain and thin type of pancakes.

Angry Bird Pizza

Chicken Alfredo


I came across this interesting recipe and decided to give it a try. Well, it was indeed yummy! I love the cheesy taste and it blended well with my favourite Broccoli. Glad that my kids love it too!

Ingredients

1 Tbsp olive oil
1 lb boneless skinless chicken breast, cut into chunks
Salt and pepper
1 1/2 cups chicken broth
100g whipping cream
1 pkt penne pasta or any bite-sized shape pasta, uncooked
2 stalks broccoli
1 pkt grated parmesan cheese

Directions

1. Heat the oil in a large pot with a lid over medium heat.
2. Sprinkle chicken with salt and pepper, add to pot and cook until golden brown on the bottom, then flip over and brown the other side.
3. Pour in the chicken broth and cream. Add pasta to the pot and bring to a boil.
4. Put on the lid, turn the heat down to a simmer and let cook 10 minutes.
5. Add the broccoli and simmer 5 more minutes or until pasta, chicken and broccoli are all cooked through.

Shepherd Pie

My first dish for the New Year 2016. This is always my kids and my all-time favourite (I have done this in mini pies too), something different apart from our usual rice meals.

Shepherd pie originated in Scotland and in the north of England. Originally, it was made from chunks of meat and the name of the dish appeared in 1870s. The potatoes mixed with lots of butter and mashed smoothly to place on top of the meat mixture. Baked till the top turn lightly brown and to serve hot.

Hope that this delicious Shepherd Pie would bring me a great start for 2016 and I am able to keep my baking and cooking passion at the same time recording them in my blog to share with everyone :).

Ingredients

Toppings:
  • 2 large potatoes (boil and mashed)
  • Some butter
  • Mozzarella cheese
Fillings:
  • 300g or 1 pack of chicken breast/legs
  • 1 carrot (diced)
  • 1/2 large onion (sliced)
  • 1/2 can button mushroom (sliced)
  • olive oil
  • 1 tbsp corn flour mix with 3 tbsp of water (to thicken the gravy)
Marinate chicken:
  • 2 tbsp oyster sauce
  • 1 tsp of Knorr seasoning
  • 1 tbsp dark soya sauce
  • 1 tbsp sesame oil
  • 2 tbsp Parsley flakes
  • some pepper

Directions

1. Add butter to mashed potatoes and leave aside.
2. Heat up pan with olive oil. Saute sliced onion till its fragrant and soft. Add diced carrots and cook for a while. Stir in the chicken, continue to cook in medium heat. Add in mushroom slices and pour in the cornflour mixture till thicken. Taste and add more seasoning to your preference. Set aside.
3. Preheat oven at 200 degree C.
4. Put fillings into aluminium cups almost 1/2 cup. Spoon mashed potatoes on top of fillings and press to level. Top it with Mozzarella Cheese.
5. Bake at 200 degree C until brown.

Notes

The seasoning to marinate chicken are estimated. You can adjust to your own liking.

Cheese Corn Dogs


I came across this recipe from Happy Cooking Recipes and so tempted to try it out. Not sure whether it was due to the fresh milk I used instead of Buttermilk, the batter seems to be very watery and I have to add more flour to thicken it. My suggestion is do not add the milk all at once, add little by little to see the consistency. The Corn Dogs turned out delicious and everyone ate with big thumbs up!

There were a few steps that I did it my way and wanted to record for my future reference.
  • followed the original recipe using cup measurements (though I very much prefer in gram).
  • found this packet of cornmeal (Polenta) in NTUC supermarket.
  • used 1 cup Fresh Milk in replace of 11/2 cups Buttermilk (Note: do not add all at once, add gradually till thick batter).
  • used Cheese Hotdogs as my kids love them.
  • did not put the satay sticks first as my frying pan too small so I only skewed after frying.

Cornmeal
Recipe with modifications

Ingredients 

1 cup yellow cornmeal
1 cup plain four
1/4 sugar
1 tbsp baking powder
1/4 tsp salt
1 egg (beaten)
1 cup fresh milk
1 tbsp canola oil
1 tbsp honey
2 pkts of cheese hotdogs
Satay sticks
Oil for frying

Directions

1. In mixing bowl, add cornmeal, plain four, sugar, baking powder and salt. Stir together.
2. Add beaten egg, milk, oil and honey and mix till well combined (batter should be a little thick).
3. Wipe cheese hotdogs dry with a paper towel. Dip hotdogs into batter and slowly lower into the hot oil.
4. Fry till all sides golden brown, remove from oil and place on paper towel to drain off excess oil.
5. Skew with satay sticks and ready to serve.

My hubby requested western meal, so I decided to whip up chicken chop for dinner. Feeling accomplished for a great meal done. 

For the sauce, I have used Campbell soup base with black pepper and dark sauce and it tasted equally nice as those sold in restaurants.

Croquettes with Melted Cheese

I had some cheddar cheese in the fridge, so I decided to make this croquettes for lunch today. The preparation was quite easy but the frying was challenging. The oil must be hot enough and you need to be quick to get it out once it turns golden brown. MIL and kids enjoyed it very much!

Ingredients

4 large potatoes (boiled/steamed, mashed)
150g minced meat
1/4 large onion (sliced)
1/4 carrots (diced)
3pcs cheddar cheese(tear into small pcs)
Salt and pepper to taste
Flour
1 egg (Beaten)
Bread crumbs


Directions

1. Fry the onion till transparent, add carrots and minced meat. Fry till all cooked.
2. Mix the mashed potatoes together with the minced meat mixture till well combined. Add in salt and pepper to taste.
3. Pick 1 portion and flatten it, add some cheese in the middle and cover with another portion of mashed potatoes. Make into a patty form or balls.
4. Coat them with flour, then beaten egg and lastly bread crumbs.
5. Deep dry in low-medium heat oil till golden brown.

Yummy Chicken Burger

This is another favorite dish that my kids love to eat. Making sure they have a balance meal, I have included salad in it and they  enjoyed the meal with finger looking good!


Ingredients

  • 1pkt of chicken burger patty (6pcs)
  • 6pcs of burger bun
  • 6pcs of cheddar cheese
  • 1/2 lettuce
  • 2pcs tomatoes
  • 3pcs potatoes (boiled and cut into cubes)
  • 1pkt Onion rings
  • Mayonnaise as preferred
  • Bacon bits as preferred

Directions

1. Boiled potatoes and cut into cubes. Add in Mayonnaise and mix well.
2. Fried Chicken patty and onion rings till brown.
3. Cut the burger bun into half. Lay a slice of lettuce,tomato,cheddar cheese on the base of burger.
4. Place chicken patty on top of cheese and add a tsp of mayo on patty. Cover top with bun.
5. Lay a slice of lettuce and place the potato salad on it. Sprinkle bacon bits as preferred.

Best Ever Pizza


This is the best homemade pizza I ever made. My kids will keep asking for these every weekends. Ideal for party or Hi-Tea. Thanks to Rachel Tan for the recipe.






Ingredients

  • 1 pkt Gardenia Wholemeal wraps (5pcs)
  • 1 pkt of Mozzarella cheese
  • 1 can of Tomato Pasta sauce
  • Cut below into small pieces:
  • 4pcs Hotdog
  • 4pcs Crabmeat sticks
  • 4slices Ham
  • 1 can Button mushrooms
  • 1/2 Capsicum

Directions

1. Put 2 slices of wraps on baking tray and bake for 1 min.
2. Take out and spread Tomato Pasta sauce evenly on wraps.
3. Sprinkle Mozzarella cheese on top of sauce.
4. Add in all cut ingredients as per your preference.
5. Bake for 15 mins or till wrap crispy.
6. Cut into smaller pcs and ready to serve.
