Fish & Chips

It was Good Friday and since no meat for the day, I decided to whip up this Fish & Chips for lunch. Quickly, I searched the internet and I was lucky to try out this simple and amazing batter recipe. It had the right coating I wanted and it was just like those sold at Long John Silver. Indeed a good recipe to keep.

Ingredients

7 slices of frozen fish fillets

Marinate:
2 tbsp sesame oil
3 tbsp light soya sauce
Dash of pepper

Batter:
1.5 cups of plain flour
4 tbsp cornflour
1/2 tsp baking powder
1/2 tsp baking soda
1.5 cups of soda water (Schweppes)

Directions

1. In a large mixing bowl, sift together plain flour, cornflour, baking soda and baking powder. Add in soda water until well combined.
2. Completely cover the fish and deep fry in medium high oil until golden brown.

Salmon Mushroom Linguine


My maid had her off day today and so I needed to prepare lunch. Checked the fridge and glad that there was salmon for me to cook this Salmon Mushroom Linguine. Nothing difficult, seasoned the salmon and baked it. Added some shitake mushrooms into the tomato sauce and lastly threw in the linguine and mixed well. Topped the linguine with a piece of baked Salmon and all ready for lunch. Very satisfying and fulfilling!
